How to Make Meringue

Meringue is a really simple dessert to bake and I’m sure you will already have the ingredients in your house right now. There is a popular misconception that meringue is quite a fiddly thing to make well guess again. With this simple recipe you will be a meringue expert in now time at all. You will need:

  • 3 large, organic egg whites
  • 175g white caster sugar
  • ½ tsp vanilla extract

This recipes will serve between 5-6 people and will take you about an hour and a half to make. I know that sounds like a lot but the majority of it is baking and cooling. Lets get started.

Step One: Preheat your oven to 140°C/fan120°C/gas 1. While this is heating up grab a large grease-free mixing bowl and separate your egg whites. Add them to the bowl and whisk them up until the egg whites peaks when you lift out your whisk. You will then need to whisk them continuously and slowly add you caster sugar 1 tablespoon at a time. Eventually you will have a stiff and glossy consistency in the bowl. Add in your vanilla extract and whisk again until it disappears.

Step Two: Take your baking tray and line it with baking paper. A tip would be to fix it in place by adding a dollop of meringue in each corner first so it doesn’t move. Add 6 blobs onto your baking tray leaving plenty of space between them. the meringue will seep pout and you dont want to end up with one super meringue rather than 6 individuals.

Step Three: Bake them for 1 hour and 15 minutes if you would like a soft, chewy centre or 1 and a half hours if you would liken them crisp. peel them off of your baking paper and sit them somewhere to cool. Or if you like them crisp just switch off the oven and let them cool in there for around 4 hours.

Step Four: Enjoy!

Meringues are great on their own but why not try adding some homemade jam or raspberry coulis to make them even more exciting.
