Who doesn’t love pancakes. Especially in the morning . Its the perfect treat fro your family and I dont know how many times I have woken up and made pancakes and bacon on a Sunday morning for my little ones and partner. Its the perfect way to start a lazy Sunday and they are really easy to make. As with all our recipes this is measured in cups so it will save you a bit of hassle but also a bit of clean up. you will need:
- 1 large free-range egg
- 1 cup of self-raising flour
- 1 cup of milk
- sea salt
This will make 8 pancakes in total but if your like me I double up on the ingredients so we can have a sneaky pancake later on at lunch time.
Step One: Start making the batter by cracking the egg into a large mixing bowl. then add the flour, milk and pinch of salt the the mixture.
Step Two: Whisk everything together. Take extra care to make sure that the mixture is really smooth. it’s at this point if you wanted to add anything else into the mixture such as blueberries or raisins then you would do so. Mix again.
Step Three: Put a large frying pan on the cooker on a medium heat with a little bit of oil. Keep the oil handy because you will need it again. Spread the oil evenly.
Step Four: Add some of the mixture. I like to cook my pancakes one at a time and leave them to keep warm in the oven but i’ll leave this up to your preference. Cook the pancakes until you start to see little bubbles appear on the surface. When they do flip them over and cook the other side for between 1-2 minutes.
Step Five: Repeat the process until all you mixture is finished.
Step Six: Enjoy!
